Michelle and Tom roasted their first 1-lb batch on a sample roaster in a spare bedroom in 2017. By 2019 they’d outgrown the kitchen and opened a 14-seat café on Main Street. Today Dockside roasts for a dozen restaurants up and down I-77, but the coffee you drink in our café is still chosen each morning by whoever is pulling shots. That’s on purpose.
